Ingredients
- COOKIE:
- 115 g unsalted butter, soft (1/2 cup)
- 150 g sugar (3/4 cup)
- 1 large egg
- 1 tsp vanilla
- 140 g all-purpose flour (1 1/8 cups)
- 60 g Dutch cocoa (2/3 cup)
- 1/2 tsp baking soda
- 1/2 tsp salt
- FILLING:
- 115 g butter (1/2 cup)
- 240 g powdered sugar (2 cups)
- 1 tsp vanilla
- Pinch salt
Method
- Beat butter & sugar; add egg, vanilla.
- Whisk flour, cocoa, soda, salt; mix in. Chill 20 min.
- Roll thin; cut 2-in rounds; bake 350°F / 177°C for 8–10 min.
- Filling: beat butter, sugar, vanilla, salt until fluffy.
- Sandwich cooled wafers.
Tips
Roll dough thin; slightly crisp wafers make the best bite.
