Ingredients
- 226 g unsalted butter, soft (1 cup)
- 150 g powdered sugar (1 1/4 cups)
- 2 large egg yolks
- 1 tsp vanilla
- 240 g all-purpose flour (2 cups)
- 160 g cornstarch (1 1/3 cups)
- 1/2 tsp baking powder
- 1/2 tsp salt
- Dulce de leche (about 1 1/2 cups)
- Shredded coconut (optional)
Method
- Cream butter & sugar; add yolks, vanilla.
- Whisk flours, baking powder, salt; mix to a soft dough. Chill 30 min.
- Roll 1/4 in; cut 2-in rounds; bake 325°F / 163°C for 10–12 min (pale).
- Sandwich with dulce de leche; roll edges in coconut.
Tips
Keep shells pale for tenderness; fill generously.
