Ingredients
- 120 g almond flour (1 1/4 cups)
- 200 g powdered sugar (1 2/3 cups)
- 100 g egg whites (about 3 whites), room temp
- 90 g sugar (1/2 cup - 1 tbsp)
- Pinch cream of tartar
- Gel color (optional)
- Buttercream or ganache filling
Method
- Sift almond flour & powdered sugar.
- Whip whites with cream of tartar; stream in sugar to stiff peaks; tint if using.
- Macaronage: fold in dries to lava flow.
- Pipe 1.5 in rounds; tap tray; rest 30–45 min until tops are dry.
- Bake 300°F / 150°C for 15–18 min. Fill when cool.
Tips
Aim for lava-like ribbons; shells should not wobble when done.
