Ingredients

  • 120 g almond flour (1 1/4 cups)
  • 200 g powdered sugar (1 2/3 cups)
  • 100 g egg whites (about 3 whites), room temp
  • 90 g sugar (1/2 cup - 1 tbsp)
  • Pinch cream of tartar
  • Gel color (optional)
  • Buttercream or ganache filling

Method

  1. Sift almond flour & powdered sugar.
  2. Whip whites with cream of tartar; stream in sugar to stiff peaks; tint if using.
  3. Macaronage: fold in dries to lava flow.
  4. Pipe 1.5 in rounds; tap tray; rest 30–45 min until tops are dry.
  5. Bake 300°F / 150°C for 15–18 min. Fill when cool.

Tips

Aim for lava-like ribbons; shells should not wobble when done.
