Ingredients

  • COOKIE:
  • 115 g unsalted butter, soft (1/2 cup)
  • 150 g sugar (3/4 cup)
  • 1 large egg
  • 1 tsp vanilla
  • 140 g all-purpose flour (1 1/8 cups)
  • 60 g Dutch cocoa (2/3 cup)
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • FILLING:
  • 115 g butter (1/2 cup)
  • 240 g powdered sugar (2 cups)
  • 1 tsp vanilla
  • Pinch salt

Method

  1. Beat butter & sugar; add egg, vanilla.
  2. Whisk flour, cocoa, soda, salt; mix in. Chill 20 min.
  3. Roll thin; cut 2-in rounds; bake 350°F / 177°C for 8–10 min.
  4. Filling: beat butter, sugar, vanilla, salt until fluffy.
  5. Sandwich cooled wafers.

Tips

Roll dough thin; slightly crisp wafers make the best bite.
